Food for Friday: Chickpea and Zucchini Patties

After eating unhealthy food for a few days (spaghetti, french fries, eggrolls) I was fed up with it and yearning for some fresh, healthy nutrition. I usually listen to my boyfriend's suggestions for dinner, but since he always comes up with the same fatty, heavy options, I just said F that, today I decide. Eating crap for a few days in a row can really get me down and make me feel shitty, especially in the winter time when salads are basically off the menu. I need some vegetables, vitamins and fresh produce, yo!

SO. I wanted to go big on the vegetables and decided to make some chickpea and zucchini patties to go with pita bread. What you need:

for the patties:
  • 1 zucchini
  • a can of chickpeas
  • salt
  • pepper
  • coriander
  • oregano
  • garlic (at least 3 cloves, this recipe really needs some fiery seasoning)
  • 1 onion
  • 1 or 2 eggs
  • breadcrumbs

for garnish:
  • cherry tomatoes
  • lemon juice
  • seasoning
  • lettuce
  • olives
  • cucumber
  • basically anything fresh and flavorful: throw it in there!

for the dressing:
  • greek yoghurt
  • lemon juice
  • mint
  • garlic


What you'll do:

Throw your zucchini, chickpeas, garlic and onion in a mixer and give all of it a few whirls. Don't mix for too long, you still want everything to be somewhat chunky. Season well, before you add the eggs. After adding the raw eggs you won't be able to taste anymore (ew, salmonella!) so be sure to get the taste right now. When you're done, throw them eggz in and add breadcrumbs until the mixture goes from uber sticky to somewhat cohesive and less sticky (lol). Form your patties: not too thin, not too big, because otherwise they'll fall apart. Sprinkle some flour or breadcrumbs on every patty to keep them from sticking together. Fry in a frying pan for a few minutes on both sides until crispy.




While your patties are frying, chop up your garnishes. I love dicing my cherry tomatoes and letting them sit in a mixture of mint, olive oil, lemon juice, salt and pepper for a bit because it really brings out their flavour. For the dressing: just throw all of the ingredients I mentioned together after chopping up the mint and garlic. 

Put all of your prepared fudz in a pita bun (I usually warm mine in our toaster machine) et voila: YUMMINESS! Sorry for the crap pictures, there was no natural light left and I forgot to take pictures of my ingredients before getting in there :( Forever too hasty.
